Don’t We Love Pancakes? I Mean The Healthy Ones!

Don’t we all love pancakes for breakfast? My family sure does. I used to eat frozen pancakes on the weekends until I learned how to make my own without using animal products. The first time I made them I couldn’t believe how delicious these vegan homemade pancakes were.

Here are my family’s favorite pancake recipes with a salad option on the side:

Banana & Coconut Pancake Recipe

  • 1   1/2 cup of organic oats
  • 1 cup of wheat flour
  • 1 tsp of vanilla extract
  • 1 tsp of cinnamon
  • 1 cup of almond milk
  • 1/2 tsp of baking soda
  • 1 cup of coconut flakes
  • 1  1/2 peeled banana

Blueberry & Banana Pancake Recipe

  • 1  1/2 cup of organic oats
  • 1 cup of wheat flour
  • 1 tsp of vanilla extract
  • 1 tsp of cinnamon
  • 1 cup of almond milk
  • 1/2 tsp of baking soda
  • 1 cup of blueberries
  • 1 peeled banana
  • 1 tsp of coconut sugar

*Add 1 tsp of hemp or chia seeds for omega 3

Instructions

  1. Preheat a nonstick pan over medium heat.
  2. Add all of the ingredients in a blender and blend until creamy.
  3. Lightly grease pan with a small amount of coconut oil or olive oil.
  4. Scoop 1/4 cup of batter onto the pan and cook until bubbles appear and the edges look dry.
  5. Flip and cook the other side until golden.
  6. Serve with a rainbow salad on the side
Salad Recipe

1 yellow and red pepper
2 Tomatoes
1 Red onion
1/4 of Cilantro head
1 Cucumber
4 Scallions
