Is it the weekend yet? Because weekend calls for FLUFFY Vegan pancakes! 🙂
You wouldn’t even know they were vegan unless I told you. This is coming from someone who used to eat frozen pancakes on the weekends because I had no idea that homemade vegan pancakes tasted better and can be made with just 7 ingredients. Do you know you don’t need butter, cow milk, or processed ingredients for these pancakes? These pancakes are healthy and are packed with Omega 3. So today I’m sharing my vegan pancake recipe so you too can get to enjoy it.
Here it goes…aren’t they beautiful?
2 cups of unbleached flour
1/2 cup of chia seeds
3 tsps of baking powder
1/2 cup of coconut sugar
1/4 tsp of cinnamon powder
2 cups of rice milk
3 tsps of apple cider vinegar (secret ingredient to make them fluffy)
Set out all your ingredients.
Set a stove element with a pan, coconut or olive oil, to medium heat.
Combine the dry ingredients first (flour, sugar, baking powder,’cinnamon, and seeds) in a bowl.
Add the rice milk and apple cider vinegar.
Mix until smooth (as shown on the picture above).
Now the pan should be ready for your batter, so add one pancakes’ worth of mixture into the pan. That should be approximately 1 cup of batter.
Flip carefully when you see bubbles in the middle of the pancake, or if the edges are looking stiffened.
Repeat until the batter is gone, and try not to eat them all while you’re cooking them. 🙂
Add fruits and nuts of your choice (have fun with this and get creative, especially for the kids)
Can you believe this recipe takes about 5-10 mins to make. Give it a shot. You won’t be dissapointed. These pancakes are yummy!
